ORIGIN
This wine is the product of two Az. Agr. "LO SPARVIERE"
vineyards, "Ciusė" and "Badia",
gently sloping, south-west facing in the district
of Provaglio d'Iseo.
SOIL
COMPOSITION
Of morainic origin, it exhibits a red, reddish brown
structure in a mixture of slit and clay. Grass is grown
between the rows while the rows themselves are worked
mechanically. Organic fertilizer is spread on the soil
every four years.
VINES
100% Chardonnay from French clones 96-97-77 and
Italian clones 130 on an SO4 graft-support. The vines
are permanently bound with 3 branches bearing 6 gemmas
each. The vines were planted in 1980.
WINE-MARKING
METHOD
Hand picked into small boxes; light pressing of
complete bunches, controlled fermentation at 19-21°C
with selected yeasts. Maturation in stainless steel
still with the yeasts; the malolactic fermentation has
already partially taken place. The wine is separated
from the fermenting agents just before bottling.
ORGANOLEPTIC
CARD
Medium yellow with pale green and straw-coloured
reflections. The olfactory notes are pleasant, intense
mature fruit but also spicey and with a hint of
minerals. It sits well on the palate and reveals a
robust and good balance. It has persistence with a hind
of well-mixed cedar and spice.
