 ORIGIN
From the vineyard in "Sergnana" in the
district of Provaglio d'Iseo. The vineyard sits on the
flanks of a mountain which rises right behind the first
low hills. The vines face due south overlooking almost
all of eastern Franciacorta.
SOIL
COMPOSITION
The soil is in great part the result of the
decomposition of local rocks and cyclical alluvial
deposits from nearby mountain rivers. The texture of the
soil is mostly clay mixed with decomposing rock. Grass
is grown between the rows wile the rows themselves are
worked mechanically. The only intervention is the
spreading of organic fertilizer once every four years.
VINES
Cabernet sauvignon and Merlot selected from French
clones that are particularly well-suited to the
environment. The vines are trained using the guyot
method.
WINE-MAKING
METHOD
The two types of vines are harvested at different
times. Both are closely watched to catch the best moment
to cut the grapes from the vine. They are collected in
small containers, gently removed from the bunches and
stalks and turned into wine in stainless steel using
their natural autocloning yeasts. The uncontrolled
fermentation process may reach temperatures of 32-33°C.
Four pressings are made daily during fermentation though
fewer towards the end of the sugar transformation.
Static maceration follow for a few days. When the wine
is racked, some is put into small wooden barrels of
first, second or third use and some into glass-lined
vats. It completes its maturation there for 12-15 months
and only at the moment of removal from the barrels does
the "Cuveč" take place between the Cabernet
sauvignon, Merlot and small quantities of Barbera and
Nebbiolo in order to follow the traditional process of
Franciacorta red. Several months after preparation of
the "Cuveč", bottling takes place. The
bottles are laid down in cool cellars where they
complete their maturation.
ORGANOLEPTIC
CARD
The "Vino del Cacciatore" is medium ruby
red. It has a good nose with suggestions of cherry and
bilberry. Alongside this is the spiceyness of the
Cabernet and the sweet, roasted tints of wood. The wine
is strong on the palate with a dash of vanilla and
sweetness. Pleasing too are the dashes of fruit which
complete the overall presence of this complex, powerful
wine.
